Pavlova Recipe

Hello guys,Today i want to shared with you a simple recipe pavlova.Pavlova is one of those desserts that is notoriously easy yet notoriously difficult.I think many people are scared to make it.But don't worry with this recipe you will enjoy make this pavlova.



Meringue Ingredients:

  • Caster Sugar                               500 g
  • Vanilla Essence                               2 tsp
  • White Egg                                       8 Nos
  • Corn Flour                                       2 tsp
  • White Vinegar                                 2 tsp


Method:

  1. Preheat oven at 140℃ to 150 ℃.
  2. In mixing bowl, beat egg white and vanilla essence.Until stiff.
  3. Add sugar slowly,beating well after each addition.Beat until thick and glossy.
  4. Add corn flour.Mix well
  5. lastly add white vinegar.
  6. Pipe in try and bake for 25 minute.

Topping:
  • Icing Sugar                                      3 tbsp
  • Heavy cream                                350 ml
Method:
  1. In mixing Bowl,Beat heavy cream and sugar until stiff peaks form.Fill the center of the meringue with whipped cream,and top with peach slices.
This pavlova is meringue crust on the outside,soft marshmallow on the inside,Topped with cream and fruit,The pavlova always steals the show at gatherings..

Burnt Cheesecake

Hello guys,

It's me again.Burnt Cheesecake?Hmm...I learn about this cheesecake from our lecturer Chef Naim .And of course I was curious about this.But after we make this cake i gotta love this cake.And I believe you also will love this cake.And the ingredients are easy to find.


Ingredients:
  • Cream Cheese                                        1 kg
  • Caster Sugar                                           1 Cup
  • Egg                                                          7 Nos
  • Heavy Cream                                          2 Cup
  • Plain flour                                              1/4 Cup


Method:
  1. Preheat oven at 200 ℃
  2. In mixing bowl,Beat the Cream cheese and sugar until creamy.
  3. Add eggs,One at a time,beating well after each addition.
  4. add heavy cream and beat until well incorporated.
  5. Lastly,Put flour and use spatula to fold until well mixed.
  6. Bake for 1 hour.

This is my first time make this cheesecake.I really enjoy  when we make this cake.This cake not really sweet but very delicious and now this be my one of my favorite cheese cake.

Purchasing And Storage

Hello guys,

What do we have to know about this topic is the process of purchasing, receiving, storing and issuing procedures.

We need to know what is the factors that affect purchasing requirements:
The type and image of establishment, style of operation and system of service, storage available, financial resource and buying policies and availability.

What is purchasing?
Purchasing is a formal process of buying goods and services. There are two type of purchase order, open market or contract buying. We need to make sure the specify accurate size and weight of food, frequent delivery for fresh and always check for the price and bargain.

What is receiving?
Receiving is a proper receiving essential and vital for success of food service operation. Some rules of receiving is inspect the product according to invoice, list all the item received in report and have a proper storage. The delivered was check on quality, quantity and price.

What is storing?
Some food needs to be kept in the fridge to help stop bacteria from growing on it, such as food with a 'use by' date, cooked food and ready-to-eat food such as desserts and cooked meats.

What is issuing and inventory ?
Issuing is more prevalent in food service operations where more than one outlet uses a food storage area. Such as in a hotel where the coffee shop, banquets and the fine dining restaurant all share a central dining room and a storeroom. While inventory is an unpopular task at most restaurants, but one that is critical to controlling food costs and improving profitability.

So if we make a good storage we can control our food quality. Store it in a suitable place, and we can use it in a good condition.

Quiche Lorraine pie

Hello guys,Welcome back to my blog,At my entry today i will share how to make Quiche Lorraine Pie.This recipe that chef Naim teach us is very creamy and delicious.This was my first time making quiche and i found this a very simple and easy to follow this recipe.So this is the ingredients.


Crust:

  • Butter (Cold & Diced)                      200 g
  • Cake Flour                                        400 g
  • Egg                                                       2 Nos
  • Salt                                                     1/2 Tsp
  • Milk                                                      2 tbsp

Method:

  1. Preheat oven 160℃
  2. In bowl,Put butter ,salt and cake flour.Using a finger tips until the mixture resembles coarse meal.
  3. Add egg,work it until the dough come together.
  4. add milk and work it again until the dough combined together and ready to use.
  5. Roll  the dough and put at the pie mole.Use fork to poke holes at the base of pie cases.Then, cover with parchment paper and use dried beans as pie weights.
  6. bake for 20 to 30 minutes.




Filling:
  • Minced chicken                                  400 g
  • Onion(Chopped)                                     1 Nos
  • Dried Thyme                                           1 tsp
  • Salt                                                           2 tsp
  • Oil                                                            2 Tbsp

Method:
  1. heat the oil in a frying pan,add  Onion.stirring frequently until tender.
  2. Add chicken stir using wood spoon until the chicken cook.
  3. Lastly add salt and Dried thyme.
  4. Put into Pie shell

Custard:
  • Milk                                                       130 g
  • Heavy cream                                          130 ml
  • Egg                                                             2 Nos
Method:
  1. Combine all the ingredients together.
  2. Pour at the pie shell

You also can put any vegetable that you like,such a carrot,celery,mushroom or so on. I will make this quiche again at home for my family and will definitely make again.

Cucur Bawang




Hello guys,
In my entry today I will this you a recipe cucur bawang and sos cucur that we have learn form chef naim.It easy.I still remember when I was small,my mom used to make lots of cucurs for our breakfast.I never fancied them all that much,maybe because it always available!Be it onion fritters,anchovies,or the medley of any vegetable she could find.This is easy to make yet goes very well for anytime snack.So this the recipe.

Hasil carian imej untuk cucur bawang

 Ingredients for cucur bawang:

Plain flour 500 g
Dry yeast 1½ tbsp
Egg   1 Nos
Baking Powder 3/4 tbsp
Salt  1 tsp
Onion 1 Nos
Warm water 600 g


Method:

1. In bowl,Mix all the ingredients together until well combined,add water and form thick 
     pancake batter.
2. Let the batter rest for 30 minutes.
3. Heat the oil.Spoon some batter into the hot oil and fry until golden.

Sos cucur:

Cili boh 1 Packet
Water 1 liter
Gula melaka       
Salt 26 gm
Garlic 50 g
Onion 100 g

Method:
1. Place the some water,garlic and onion in blander and blend until smooth.
2. Cook all the ingredients in the pot.and let the sos a bit sticky.
3. Ready to use.

Rainbow marble cake.


Hello guys,How are you today?..Today chef naim teach us how to make a Rainbow  marble cake.The recipe Same like recipe marble cake that i already shared at my last entry but in rainbow marble cake recipe we do not need a cocoa powder.we just need food coloring .It's depends with you what color you want to use at your rainbow marble cake.In our cake we choose red color,yellow color and green color.

Butter 500 g
Castor Sugar 380 g
Egg  10 Nos
Milk 100 ml
Cake flour 460 g
Baking Powder   1 tsp
Vanilla Essence   1 tsp
Food coloring(as you like)


Method:

1. Preheat Oven to 170 .
2. Combine the cake flour and baking powder in a bowl.Shift and set aside.
3. In mixing bowl,beat butter and castor sugar together until light in color and fluffy,about 3-4 minutes.
4. Add the eggs two at the time,mixing until well combined after each.Scrape down the sides of the bowl as needed to be sure all ingredients are well incorporated.
5. Add Milk and vanilla essence.Mix well.
6. Add dry ingredients and mix until well combined and smooth.Scrape down the sides of the bowl as needed to be sure all ingredients are well incorporated.Do not over mix the batter.
7.Divided into 3 separate bowls adding a few drops of food coloring to make a batch of each color.
8.Using a spoon,dollop one colored batter into the cake tin.Continue the step until the last batter.
9. Bake a cake for 30 to 40 minutes,or until a toothpick inserted in the thickest part of a cake comes out clean.Remove cake from the oven and allow to coll completely in the pans set on a wire rack.


This easy Marble cake recipe is wonderfully moist This is just simple recipe but if you not do a right method.You will not get the best cake texture.So before u start make this cake.Make sure you read this recipe carefully.That’s all from me..

Biscotti

Hey guys,
Today in class chef naim teach us how to make biscotti.Biscotti are italian biscuits that originated in the city of Prato.They are twice baked,ablong-shaped,dry, and crunchy.This is the recipe.


Ingredients:

Egg Whites 160 g
Caster Sugar       100 g
A pinch of salt
Vanilla Essence  2/4 tsp
Plain flour  100 g
Rice flour   40 g
Almonds  100 g



Method:

1. In mixing bowl,Whisk egg white until it bubbles.
2. Then,add sugar and salt and whisk again.Until it turns into meringue
3. Add vanilla essence,mix well
4. Lastly,fold in flours and almonds.mix until well combined.
5. Pour batter into a pans.Bake in oven at 160 until it pales.Take it out.
6. After that slice it thinly and bake it again until it loses it’s paleness.

This is simple recipe that I have learn.And this my first time to make this biscotti.I like this recipe because the all ingredients of this recipe easy to prepared.
